Banana Pudding

Ingredients

  • 3 tablespoons corn starch
  • 1/3 cup sugar
  • 1/4 teaspoon kosher salt
  • 1 cup Planet Oat Extra Creamy Oatmilk
  • 1 teaspoon vanilla paste
  • 1 tablespoon plant-based butter

Assembly:

  • 1/2 cup plant-based whipping cream (whipped to stiff peaks)
  • 2 medium bananas sliced thinly
  • 1 1/2 cups of vanilla wafers

Directions

  1. In a small bowl, whisk the corn starch, sugar, and salt until well combined.
  2. In a small saucepan add Planet Oat Extra Creamy Oatmilk and cook over medium heat until it simmers gently.
  3. Slowly add the dry mix into the simmering oatmilk while whisking vigorously to avoid clumping.
  4. Continue cooking and whisking until the mixture thickens to a pudding-like texture.
  5. Remove from the heat and transfer to a medium bowl.Stir in vanilla paste and plant-based butter until well combined.
  6. Allow the mixture to cool to room temperature.Cover with cling film and allow the film to come in contact with the top of the pudding. Refrigerate until completely chilled at least 1 hour or overnight.
  7. Add the plant-based whipped cream to the chilled pudding mixture and fold together until it is well combined.

Assembly:

  1. Spoon a thin layer of pudding into the bottom of the serving dish or cups.
  2. Add 1 layer of vanilla wafers and then a layer of sliced bananas.
  3. Add another layer of pudding. Add another layer of vanilla wafers and then another layer of sliced bananas.
  4. Add the last layer of pudding.
  5. Garnish with remaining bananas and vanilla wafers and cover.
  6. Refrigerate for at least 4 hours-overnight allowing the wafer cookies to soften to a cake-like texture. Serve and Enjoy!
