- 1 1/4 cups white whole wheat flour (also called golden wheat)
- 1 cup old-fashioned rolled oats
- 2 tablespoons ground flaxseed
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1 cup Planet Oat Humble Edition
- 1/4 cup canola or avocado oil
- 1/2 cup packed light brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 medium carrots, finely grated (about 1 1/2 cups grated carrot)
- 1 medium apple, grated (any variety)
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1/4 cup unsweetened shredded coconut
Directions
- Preheat oven to 425°F. Line a 12-cup muffin tin with paper liners and lightly grease with cooking spray.
- In a large bowl, whisk together flour, oats, flaxseed, baking soda, baking powder, cinnamon, salt, ginger and nutmeg.
- In a medium bowl, whisk together Planet Oat Humble Edition, oil, brown sugar, eggs and vanilla. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the carrot, apple, raisins, walnuts and coconut. Do not overmix. Let batter sit 10 minutes.
- Divide batter evenly among the prepared muffin cups, filling each full. Bake at 425 for 5 minutes, then, without opening the oven door, reduce oven temperature to 350 degrees F and bake another 12-15 minutes, until the tops spring back lightly when touched and a toothpick inserted into the center comes out with a few moist crumbs.
- Cool muffins in the pan for 10-15 minutes. Transfer to a wire rack to cool completely.
