Caramelized Onion Biscuit Bites

Ingredients

  • 1 tablespoon olive oil
  • 1 large sweet onion, chopped
  • 1 teaspoon thyme
  • 2 1/4 cups self-rising flour
  • 6 tablespoons non-dairy butter, cold and cut into cubes< /li>
  • 3/4 cup Planet Oat Extra Creamy Oatmilk
  • Vegan cheddar, sliced
  • Cranberry sauce

Directions

  1.   Preheat oven to 400F. Line a baking tray with parchment paper. 
  2. In a skillet over medium-low heat, add 1 tablespoon of olive oil, chopped onion, and thyme until caramelized, about 6-9 minutes.  Set aside and allow onion to cool.
  3. In a food processor, add flour and cold non-dairy butter. Pulse until the mixture resembles coarse crumbs.
  4. Transfer flour mixture to a mixing bowl and add cold Planet Oat Extra Creamy Oatmilk and caramelized onions. Stir together until just combined.
  5. Turn dough onto a lightly floured surface and dust with a bit more flour. Roll to 3/4” thickness.  Use a 1.5”-2” round cutter to cut biscuits. Reform the dough scraps and cut additional biscuits.  Transfer biscuits to baking tray and brush with Planet Oat Extra Creamy Oatmilk.
  6. Bake for 15-18 minutes until fluffy, lightly golden, and baked through.
  7. Serving Suggestion:

    Slice biscuits in half and add a piece of vegan cheese. Optional: heat in oven until cheese is melty. Add cranberry sauce on top of the cheese and serve.
