- 1 cup whole wheat flour
- 1/2 cup blanched almond flour
- 1/2 cup cane sugar
- 1/4 cup unsweetened dark cocoa
- 2 tablespoons ground flax seed
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter
- 1/2 cup + 6 tablespoons creamy salted peanut butter, divided
- 1 1/2 cups Planet Oat Dark Chocolate Oatmilk, room temperature
- 2 teaspoons vanilla extract
- 1 egg beaten, room temperature
- 9 ounces milk chocolate chips, divided
Directions
- Preheat oven to 375 degrees F. Line a muffin tin with muffin cups and spray with cooking spray.
- In a medium bowl, combine whole wheat flour, almond flour, sugar, cocoa, flax seed, baking powder and salt.
- Add butter and 1/2 cup peanut butter to a medium microwave-safe bowl. Microwave for 15-30 seconds, until melted slightly. Stir to combine. Slowly whisk in Planet Oat, vanilla and egg.
- Stir dry ingredients into wet ingredients, a little at a time, and mix until combined. Set aside roughly 1/2 cup chocolate chips. Add the remaining chocolate chips to the batter and stir until combined.
- Spoon muffin batter into muffin tins, about halfway up. Add 1/2 tablespoon peanut butter to each muffin batter center, then top muffin tins with remaining batter. Top batter with remaining chocolate chips.
- Bake muffins for 18-20 minutes, or until muffin tops are set. Let cool slightly.
- Serve with Planet Oat Original or Extra Creamy.
