Ingredients

  • 1 lb dry fettucine
  • 4 tablespoons unsalted butter
  • 1 1/2 cups Planet Oat Barista Lovers Oatmilk
  • 2 cups freshly grated Parmigiano Reggiano (approximately 3 ounces), plus more for topping 
  • Freshly ground black pepper, to taste
  • Kosher salt, to taste 
  • Chopped fresh parsley, for garnish

Directions

  1. Bring a large pot of salted water to a boil. Add fettucine.
  2. Meanwhile, add butter to a large skillet over medium low heat. Once melted, add the Planet Oat Barista Lovers Oatmilk. Bring to a low simmer, whisking occasionally. Add a generous sprinkle of freshly ground black pepper. 
  3. Once pasta is barely al dente, remove from pot with tongs and place into skillet with the Planet Oat Barista Lovers Oatmilk over medium low heat. Do not discard pasta water. Toss fettucine a few times to coat pasta with sauce. Add a small handful of Parmigiano Reggiano cheese to the pasta and toss. Once the cheese melts and the pasta becomes creamy, add another small handful of cheese and repeat with the remaining cheese. If the sauce becomes too thick or gritty, add a few tablespoons of pasta water and repeat as needed until you reach your desired consistency. Remove from heat. 
  4. Add more freshly ground black pepper and kosher salt to taste. Sprinkle with additional grated Parmigiano Reggiano and chopped fresh parsley. Serve.
