Spicy Vodka Rigatoni
Tender rigatoni tossed in a creamy, spicy vodka sauce for a restaurant-worthy pasta night at home.

- 8oz rigatoni (dry)
- 4 tablespoons olive oil
- 1 medium onion (chopped)
- 2 garlic cloves (chopped)
- 1/2 teaspoon crushed red pepper flakes
- 6 tablespoons tomato paste
- 2 oz vodka
- 1 cup Planet Oat Extra Creamy Oatmilk
- 1 tablespoon nutritional yeast (optional)
- 1-2 tablespoons grated plant based parmesan (optional)
- Fresh basil to garnish (optional)
- Salt to and pepper to taste
Directions
- Fill a large pot with 3 quarts of water. Bring the water to a boil over high heat. Add salt generously to taste. Add pasta to boiling water. Cook to al dente according to the package directions.
- In a sautee pan over medium heat add Olive Oil. Add chopped Onions and stir with a wooden spoon until cooked through and starting to brown lightly around the edges, about 5-6 minutes. Add chopped Garlic and cook until fragrant but not browned, about 1 minute. Add crushed Red Pepper Flakes and stir together.
- Add Tomato Paste, stirring often, and cook until the paste is a deep red, about 5-6 minutes.
- Add Vodka and stir and scrape the bottom of the pan. Reduce the heat to low.
- Slowly Add Planet Oat Extra Creamy Oatmilk and Nutritional Yeast (if using) and stir together until completely incorporated and heat until warmed through.
- Remove the sauce from the heat and using an immersion blender or high speed blender, blend the sauce until it is smooth and glossy, about 1 minute. Season with salt and pepper to taste.
- Mix the cooked pasta and sauce together until all the pasta is coated generously with the sauce.
- Transfer to serving platter or dishes. Top with grated Plant Based Parmesan and Fresh Basil if desired. Serve and Enjoy!
